Ingredients

For Asian Chicken Meatballs

  • 1 lb ground chicken with some dark meat and fat
  • ½ cup chopped scallions (3-4 stalks, green and white parts)
  • 2 teaspoons grated fresh ginger, with juice
  • 4 cloves garlic, grated
  • 2+2 tablespoon gluten-free tamari
  • 2 tablespoons avocado oil for cooking
  • Suggested garnishes for serving: thinly sliced scallions, chili sambal, toasted sesame seeds

Instructions

Make Asian Chicken Meatballs

  • Gently stir together 1 pound ground chicken, ½ cup finely sliced scallions, 2 teaspoons grated ginger, 4 cloves grated garlic, and 2 tablespoons tamari in a mixing bowl. Form into 1-inch diameter meatballs, about 1½ tablespoons per meatball.
  • Heat 2 tablespoons avocado oil in a large skillet over medium-high heat. Add meatballs and cook until brown all over, about 10 minutes. Transfer meatballs to a plate lined with paper towels to soak up excess cooking oil.
